The dutch baby recipe didn't include apples, but as a big fan of his blog, I saw an opportunity to adapt it to my tastes by adding more protein with extra eggs and the sweet-tart flavor of apples. Spiced Apple Dutch Baby
Ingredients
- 5 eggs, at room temperature
- 2/3 c organic whole milk, at room temperature
- 2/3 c organic flour
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1 Tbsp brown sugar
- 1/4 tsp cinnamon
- 1 apple, skin left on & thinly sliced (a granny smith, honey crisp, Braeburn, Pink Lady, & Jonagold work best for this recipe)
- 3 Tbsp organic butter
- some powdered sugar to sprinkle on top
Instructions
- Preheat oven to 425
- Place a cast iron skillet on a burner at medium heat. Add the butter.
- Let the butter melt completely. As it melts, foam will form on the surface.
- Use a spoon to gently scoop off the foam and discard it. Your clarified butter is ready to use. Turn the heat as low as it goes, while you prepare the batter.
- In a mixing bowl, whisk together the flour, brown sugar, salt, and cinnamon.
- Add the milk, vanilla, and one egg at a time, whisking slowly to incorporate each egg fully before adding the next.
- Pour the batter directly into the center of the skillet.
- Arrange the apple slices in the skillet, keeping them away from the outer 1-inch edge. This helps create that big, puffy Dutch Baby edge.
- Transfer the skillet to the preheated oven and bake for 20 minutes.
- Remove from the oven and sprinkle with powdered sugar and cinnamon.
- Serve immediately and enjoy!

- Choosing the Right Apples: For the best texture and flavor, use firm apples that hold up well when baked, such as Granny Smith, Honeycrisp, or Pink Lady.
- Clarifying Butter: If you’ve never clarified butter before, don’t worry! Simply melt the butter and scoop off the foamy top layer. This process removes the milk solids and water, leaving you with pure butterfat that has a higher smoke point and a richer flavor.
